Ingredients:
1 cup red or yellow lentils, rinsed and drained
2 tablespoons vegetable oil or ghee
1 small onion, finely chopped
3 garlic cloves, minced
1-inch piece of ginger, grated
1 teaspoon turmeric powder
1 teaspoon ground cumin
1 teaspoon garam masala
1/2 teaspoon chili powder (optional, for heat)
2 medium tomatoes, diced (or 1 cup canned tomatoes)
3 cups water or vegetable stock
1/2 cup coconut milk (optional, for creaminess)
Salt to taste
Fresh cilantro for garnish
Optional: Lemon wedges for serving
Recipe Instructions:
Prepare the Base:
Heat oil or ghee in a large pot over medium heat. Add the chopped onion and sauté for 4–5 minutes until golden brown. Stir in the garlic, ginger, turmeric, cumin, and chili powder (if using) and cook for 1–2 minutes until fragrant.Cook the Lentils:
Add the lentils and diced tomatoes to the pot. Stir well to coat the lentils in the spices. Pour in the water or vegetable stock and bring the mixture to a boil.Simmer:
Reduce the heat to low, cover the pot, and let the lentils simmer for 20–25 minutes, stirring occasionally, until they are tender and the curry thickens. Add more water if needed to reach your desired consistency.Enhance the Flavor:
Stir in the garam masala and coconut milk (if using) and let the curry simmer for another 2–3 minutes. Season with salt to taste.Serve:
